Strawberry Chocolate Chip Cheesecake
Pastry Crust (recipe follows)
3 packages (8 oz. each) cream cheese, softened
2/3 cup all-purpose flour
Sweetened whipped cream (optional)
Fresh strawberries (optional)
3/4 cup sugar
1 cup Semi-Sweet Chocolate
1 package (10 oz.) frozen sliced strawberries with syrup, thawed
3 eggs
1 teaspoon strawberry extract
4 or 5 drops red food color (optional)
Prepare Pastry Crust. Heat oven to 350 degrees. In large bowl, beat cream cheese and sugar until smooth. Puree strawberries with syrup in food processor or blender; add to cream cheese mixture. Blend in flour, eggs, strawberry extract and food color. Stir in small chocolate chips. Pour into prepared crust.
Bake 10 minutes; without opening oven door, decrease oven temperature to 250 degrees continue baking 50 to 60 minutes or until set. Loosen cheesecake from side of pan; cool to room temperature.
Refrigerate several hours or overnight; remove side of pan. Serve topped with sweetened whipped cream and strawberries. Makes10 to 12 servings.
Pastry Crust
1/3 cup butter, softened
1/3 cup sugar
1 egg
1-1/4 cups all-purpose flour
Heat oven to 450 degrees. In small bowl, beat butter and sugar untilcreamy; blend in egg. Add flour; mix well. Spread dough on bottom and 1-1/2 inches up side of 9-inch springform pan. Bake 5 minutes; cool.
