Holiday Sparkle Cake
1 pkg French Vanilla Cake Mix
1 1/3 cups water
1/3 cup vegetable oil
3 large eggs
1 tbsp, each red and green non-perils
1/2 cup Cream Cheese Frosting
1/2 cup seedless red raspberry jam
1 tub Classic Vanilla Frosting
Red and green candy sprinkles
Fresh raspberries
Preheat oven to 350 degrees. Grease and flour two 8 or 9-inch round pans. Combine cake mix, water, oil, and eggs in large bowl. Beat at low speed with electric mixer until moistened (about 30 seconds).
Beat at medium speed for 2 minutes. Gently fold 1 tablespoon each of red and green non-perils into batter, if desired. Pour batter into prepared pans. Bake and cool cake according to package directions.
To assemble, place one cake layer on serving plate. Spread cream cheese frosting on top of layer. Spread jam on top of cream cheese frosting. Top with remaining layer. Refrigerate for 20 minutes.
Spread vanilla frosting on top and sides of cake. Decorate with red and green candy sprinkles. Garnish with fresh raspberries, if desired. Makes 12 servings
