Pork in Mustard Sauce

4 boneless pork chops (about 2 pounds)
2 tablespoons butter or margarine
Salt and pepper to taste
2 to 3 tablespoons Dijon mustard
1/4 cup chopped onion
1/2 teaspoon dried tarragon
Hot cooked noodles
3/4 cup sour cream
1 teaspoon browning sauce, optional

In a large skillet, brown pork chops on both sides in butter. Season with salt and pepper. Add mustard, onion and tarragon; cover and simmer for 10-12 minutes or until pork is no longer pink.

Remove chops to a platter of noodles and keep warm. To the skillet, add sour cream and browning sauce if desired; heat through (do not boil). Spoon over pork and noodles. Makes 4 servings.
