Pickled Green Tomatoes
1 gallon jug
1 bag pickling spice
1 pint white vinegar
1/2 cup kosher salt
1 or 2 cloves of garlic to taste chopped small
1 teaspoon dill weed
6 hot cherry peppers to taste
1/2 teaspoon cherry pepper seeds
Simmer pickling spice in one quart water 15 minutes. Quarter firm green tomatoes to fill jug. Add all ingredients then set in refrigerator 3 weeks.
Notes: If jug is not filled to 1/4 inch from top add boiled water. Some types of tomatoes do not contain enough acid. To assure firmness,if not sure add 4 tablespoons lemon juice. If lid of jug is metal,scew on with a folded sheet of waxed paper.
