Nutty Date Muffins
3/4 cup all-purpose flour
1/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1/8 teaspoon ground nutmeg
1 egg
1/3 cup milk
1/4 cup butter, melted
1/4 cup chopped dates
1/4 cup chopped pecans
In a bowl, combine the flour, sugar, baking powder, cinnamon, salt and nutmeg. In another bowl, whisk the egg, milk and butter; stir into dry ingredients just until moistened. Fold in the dates and pecans.
Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing to a wire rack. Makes 6 muffins.
