Feta and Vegetable Rotini Salad
3 cups tricolor rotini pasta, cooked, drained and cooled
1 cup Crumbled Feta Cheese
1 cup halved cherry tomatoes
1 cup chopped unpeeled cucumber
1/2 cup sliced black olives
1/2 cup Zesty Italian Dressing
1/4 cup finely chopped red onion
Toss all ingredients in large bowl. Cover. Refrigerate at least 1 hour to blend flavors. Makes 8 servings, about 1 cup each
Substitute other vegetables as desired. If cherry tomatoes are not available, chop a few plum tomatoes. Or, add chopped red and green pepper in place of cucumber.
Using Unpeeled Cucumbers
When using unpeeled cucumbers, be sure to scrub very well to remove any dirt. If cucumber has been heavily waxed, then peel before using.
