Fruit Swirl Coffee Cake
1 box white cake mix
1/2 cup sour cream
1/3 cup butter or margarine, softened
1 teaspoon vanilla
2 eggs
1 can (21 ounces) apricot pie filling
1/2 cup sour cream white frosting
Heat oven to 350 degrees. Grease bottom and sides of jelly roll pan, 15 1/2x10 1/2x1 inch, with shortening; lightly flour. In large bowl, stir cake mix (dry), sour cream, butter, vanilla and eggs, using large spoon, until dough forms.
Set aside 1 cup dough; spread remaining dough in pan. Spread pie filling over dough in pan. Drop 1 cup dough by slightly less than 1 tablespoonfuls onto pie filling.
Bake about 25 minutes or until toothpick inserted near center of cake comes out clean. Microwave frosting in microwavable bowl uncovered on High 20 to 30 seconds or until melted; stir. Drizzle over warm coffee cake. Cool 30 minutes. Serve warm or cool. Makes 18 servings
