Crispy Butter Cookies
1 cup butter (no substitutes), softened
1-1/2 cups confectioners' sugar
2 egg whites
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
Sugar
In a mixing bowl, cream butter and confectioners' sugar. Beat in egg whites and vanilla. Combine flour, baking powder and baking soda; gradually add to the creamed mixture.
Roll into 1-1/2-in. balls, then roll in sugar. Place 2 in. apart on greased baking sheets. Flatten with a fork.
Bake at 350° for 12-14 minutes or until edges are lightly browned. Remove to wire racks to cool. Makes about 4 dozen.
