Chocolate Banana Snack Cake
3 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 cups sugar
1/2 cup Soft Baking Butter with Canola Oil
2 eggs
1 cup sour cream
2 medium (1 cup) ripe bananas, mashed
1 teaspoon vanilla
1 1/2 cups mini real semi-sweet chocolate chips
Heat oven to 350 degrees. Combine flour, baking powder, baking soda and salt in medium bowl; set aside.
Combine sugar and Soft Baking Butter with Canola Oil in large bowl. Beat at medium speed until creamy. Continue beating, adding eggs one at a time, until well mixed. Add sour cream, bananas and vanilla; continue beating until well mixed.
Reduce speed to low. Beat, gradually adding flour mixture and scraping bowl often, until well mixed. Gently stir in 1 cup chocolate chips by hand.
Spread batter into greased 13x9-inch baking pan. Sprinkle remaining chocolate chips over batter. Bake for 40 to 45 minutes or until toothpick inserted in center comes out clean. Makes 15 servings
